This is similar to the chicken in coconut milk, except that chicken is substituted with prawns and potatoes with pineapples. This recipe works great for crabs too.
You’ll need:
300g prawns (leave the heads and tails, though mine has no heads or tails because I bought them frozen)
To blend – 1 onion, 2 garlic, 2 cm ginger, 1 lemongrass (add some bird eye chilies if you like it hot)
Some pineapple (diced)
3 lime leaves
Some salt to taste
3 slices dried tamarind fruit
200 ml coconut milk
Some water
How to cook it:
In a pot, put the blended ingredients, lime leaves, tamarind fruit and water to cover. Leave to boil
Add in the prawns and pineapple. Let them cook.
Then add the coconut milk and salt to taste.
